福鼎郊外の丘陵地帯には、大白（ダーバイ）またはビッグホワイトと呼ばれる特別な茶樹が広がっています。その名の通り、これらの茶樹は厚い産毛に覆われたふっくらとした芽を形成します。茶樹は芽に栄養を蓄えます。それは植物の未来だからです。小さな銀針（ぎんしん）の中には、余分な糖分、ポリフェノール、さらにはカフェインも含まれています。綿毛のような産毛はトリコームで構成されており、未熟な芽がこの厳しい世界を生き抜くのを助けます。芽を丁寧に手摘みした後、ほとんどの茶職人は芽を茶倉に入れ、ゆっくりと乾燥させます。
