The volcanic soil really comes through in the cup—there's a mineral quality I wasn't expecting from a green tea. Steeping it at a lower temp keeps it from going bitter, and the second infusion is even smoother than the first.

The Jeju Sejak has this clean, grassy flavor that doesn't turn bitter even when I forget it steeping. I've been drinking it every morning this week, and the volcanic-island detail on the tin makes it feel a little special.
